Click on 'catalogue' - 'categories' and click on 'edit' the category where you'd like to add a timetable and go to 'the detail page'.
There you can activate the switch 'category has opening hours' and you can determine the specific opening hours of your category.
Don't forget to click on 'Save' 😉
